My ancestors, William and Margaret Louisa Roach, were the publicans of the pub at 312 Hackney Road, Bethnal Green in 1901. I see that you have listed Williams wife as Sophia on your list; as is stated, on the 1901 Census. However, the 1901 Census is incorrect. The wife of William Roach was Margaret Louisa Roach (nee Fox). In the baptism record for their son William Roach, (born 12 July 1898, baptised 10 Aug 1898), William and Margaret were living at 312 Hackney Road and William (senior) is listed as a Publican. William and Margaret had another child (Ellen) later in 1901. They never divorced.
I have no idea why the 1901 Census lists Margaret as Sophia. Perhaps it was her nickname at the pub or maybe just an error on the 1901 Census. They are listed correctly as William and Margaret in the 1911 Census as Publicans at 123 Bridge Road, East Molesey - the 1911 directory places them at the Prince of Wales.
